Vegan Pancakes from Scratch with DIY Elderberry Syrup Recipe

 What if your New Year's resolution tasted good and didn't seem like a resolution?

If you have decided to go gluten free and dairy free, and are looking for a quick healthy breakfast or you are trying to work more elderberries into your daily routine, then you have come to the right spot!

This quick, vegan pancake recipe from scratch is better than Joanna Gaines banana bread recipe. Not only is it tastier, it is faster too. These dairy free banana oatmeal pancakes are topped off with DIY Elderberry Syrup which will beat any blueberry sauce for pancakes! The combo is delish!

Let's take a deeper look into the ingredients and the simplicity of the recipe, shall we?

So many of our readers have questions about elderberry syrup including, but not limited to:

Today I wanted to cover a few different ways to actually use the DIY Elderberry Syrup once you have it made. After all, what good is the knowledge of elderberries, their benefits and the elderberry syrup if you don't have a habit of using it?

Elderberries are on the list of GRAS  (generally regarded as safe) foods and as such are great for using in food quantity amounts. Think of using elderberries in place of other berries in your cooking, such as in jams, jellies, teas, desserts, drinks (alcoholic and non), cobblers, pies etc. Anywhere you would use something like a blueberry, such as blueberry pancake syrup, would be a fabulous place to substitute elderberries. A fabulous way to get kids to use elderberries would be this ACV gummies that could be made with Herbal Elderberry Syrup Mix instead of tea!

When we take a super food like elderberries and work them into our daily habits, it makes it that much easier to get their benefits without the added struggle of adding 'one more pill' or 'one more spoonful' to our already busy day and regime.

The best place to start with adding elderberries daily is with breakfast! After all its the first and the MOST important meal of the day!

I'm sure most of you, like myself, are very busy! Maybe, just maybe, you set yourself aside to help the kids with their school, to clean the house, to drive around doing all the errands. You are busy taking care of your loved ones and some times that means you miss out on the nutrition you need to fuel your busy day.

They are even good enough that you might have to double and triple the recipe so that your kiddos can have some too. Or maybe for stashing some in the freezer for an even faster breakfast on the run.

Vegan Pancakes from Scratch w/ DIY Elderberry Syrup

These dairy free banana oatmeal pancakes are topped off with DIY Elderberry Syrup! The combo is delish!

Ingredients

  • 2 flax eggs (see note, reg. eggs may be subbed)
  • ¾ cup milk of choice
  • 1 ripe banana
  • 2 cups rolled oats
  • 2 tsp aluminum free baking powder
  • ½ tsp baking soda
  • 2 tbsp brown sugar (or honey)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • 1 tbsp oil for frying or butter
Elderberry Syrup

Instructions

  1. To make the elderberry syrup, pour the water over the dry elderberry mix in a small saucepan over medium heat.
  2. Bring to a simmer and reduce the heat to low. Allow to simmer for about 15 minutes until reduced.
  3. Pour the honey and apple cider vinegar into the pan and whisk until combined. Remove from the heat and allow to cool.
  4. Pour into the serving container.
  5. To make the pancakes, combine the banana and milk into a blender. Blend until smooth.
  6. Add the flax eggs, oats, baking powder, baking soda, brown sugar, vanilla, cinnamon, and a pinch of nutmeg into the blender. Blend again until smooth. Batter will be thick.
  7. Heat a skillet over medium heat and melt 1tbsp of butter. Stir until it just begins to brown.
  8. To cook the pancakes, add ¼ cup batter to the heated skillet. Allow to cook for about 2-3 minutes until the top begins to bubble. Carefully flip and cook for an additional 1-2 minutes. Repeat with the remaining batter.
  9. Serve pancakes with the homemade elderberry syrup on top and enjoy!

Notes:

To make the 2 flax eggs, combine 2 tbsp ground flaxseed with 6 tbsp water and stir. Allow to sit for 5-10 minutes for the mixture to thicken up.

I don't know about you, but I'm drooling now, and REALLY hungry. These are totally on my list for breakfast tomorrow. They are so simple to whip up in the blender and fit all my dietary restrictions. But they are fluffy and light and so yummy!
